For some reason I'm having a fad of making Banana Bread, so far its all been quite tame, I did make some banana scones as I had some mix left over.

But I am wondering about tweaking it, My next load is going be made with golden syrup. But does anyone have any tips or modifications I can try.

I assume you're using bananas that are very, VERY ripe.
The blacker, the sweeter, the better.
