Hello,

Landlady would like to get some training on cooking fish and seafood. General stuff, how to tell if it's cooked (I imagine different species have different "rules"), how to bake/pan fry/whatever the fish in the best, cheffy way. Presentation. Learn about types of fish, selecting fish etc. Storage and shelf-life etc. etc.

I wondered whether anyone had done it? I've read the reviews and most of the feedback seems to be that there's very little cooking involved and it's more to do with spotting the freshness of fish, how to prep it (knife skills) and making a basic stock.

She'd like a more comprehensive course (over a few sessions if needs be) as she'd like to lay the foundations to become an "expert" in cooking fish.

Anyone got any suggestions that are travel-able from South Bucks (that includes London). Cost isn't a great consideration but four-figures would be pushing it! wink

I've done a Billingsgate course. It was superb.

Started v early (5 I think) , was shown around the market, how it works, what the fish were etc. Went through preparing them (gutting, filleting) and then cooking and eating (3 or 4 dishes) . All hands on and practical. Finished around 1pm and you got to take some fish home etc.

Recommended.
