SOURDOUGH PIZZA

Learnt from last week’s mistake and made the my 3 standard loaves slightly smaller in order to leave enough dough left over to make the pizza.



Is anybody interested in a step by step guide to making a homemade pizza from sourdough?

Franco Manca, a small chain of pizza restaurants in London, use sour dough for their bases.

Very very nice addition to a pizza to take it up a notch, especially when it's cooked in the searingly hot pizza oven.

Would be interested in trying at home, but is it worth the faff when you're limited by temperature of a domestic oven?

Have a look for Heston Bluminthals pizza recipie from his Perfection series, it's honestly about the nicest pizza I've had. Not a sourdough but it's a couple of days with the preferment and then the main dough, and then to cook it he heats a frying pan on the hob, turns it upside down, puts the pizza on it, and shoves it under the grill when it cooks in under 2 minutes. He reckons it's the closest most people can get to a proper pizza oven at home.
