This should be interesting; I don't think I've ever had a nice one.

Cheese & onion pasties are for the most part a little cheese mixed with a lot of potato. That's what I would do, maybe mix in a little sweetcorn to alleviate the stodginess & serve with spring greens or broccoli.

Alternatively, go with Dauphinoise - it's a classic for a reason, or maybe a cheesy variant using a cheesy bechamel sauce & baked with cheese on top. It's all about what you can cook up in your mind!

MINUS the pastry, though?
C&P "pie" is only mash with cheese in.

Hows about carrot and onion and cheese?

Grate carrot fine - preferably in a food processor, chop onion, fry and sweat in butter. Grate Cheese. Season with pepper ( maybe salt if unsalted butter )

combine the three add to short crust pastry lined dish, apply a short crust pastry top, oven at around 180c until the pastry is browned.

I reckon on three good sized carrots, a large onion, and as much cheese as you dare, I dare about 200g gives you an traditional farmhouse style pasty.

Serve with taters cooked as you wish, mash, boil, fried, for potato kicks.

Mash the potatoes
Add an amazing amount of cheese (philly, strong cheddar and a.n.other) and then a bit more
Put into the oven so the top goes really crispy
