Spiral cut steak

A colleague was asking me what the Gaucho menu meant by "spiral cut" against certain steaks.

I assumed it was just the long, marinated ones they do, but I'm not sure it is.

Google shows a number of manufacturers of spiral cutting machines (mostly for ham) but I can't find a reason why you would spiral cut a steak.

So, over to the PH mahusive for enlightenment, please!

It allows for marinades to penetrate the meat evenly and quickly. Thats about it really.
