what would you do if you took them over.
i think a grill & breakfast house, open bbq's, spit roast and big breakfasts.

I don't think theres much do do, or that can be done, they'll never be a destination in themselves. Back in the day their locations were the key to their success but motoring habits have changed and even a great restaurant in the middle of nowhere will ever get enough custom for BBQ or good meat or anything that goes well with a couple of beers.
If you look at the relatively few locations that are left most make sense. They cater for the visitor/holiday/occasional traveller routes and are all profitable. I think the current investors have a done a great job given what they bought but I don't think there's much growth potential.

1. Add a drive thru2. Add "coffee shop" type food and drinks / sandwiches/panninis to go
3. Have more "fresh" items on the menu
4. Remove the microwaves
5. Invest a shed load of cash revamping the restaurants.
6. Have a "click and collect" type online ordering system.
