Anyone have any ideas what to do with these things. I've been advised by my PT to eat these more often and I've only ever really done them as part of a tray of roasted veg before. Any ideas/inspiration would be much appreciated.

mashed, baked, crushed, chips, roasted etc just substitute in the place of a potato in it normal place.

I tend to just boil mine and have them that way. I prefer the orange ones to the white ones if I have a choice.

A mate makes some shepherd's pie of sorts with mashed sweet potato. Delish.

sweet potato gratin

slice 2 sweet potatoes really thin

layer them in a shallow dish

melt a knob of butter with finely chopped chilli and spring oven with grated ginger and pour in 150/200ml of veg stock

pour over the grated spuds

bung it in the oven for 30-45 mins

Sweet potato chips ftw.

Preheat your oven (and oven dish) to about 220 - cut into chips, toss in hot oil with salt, pepper, paprika and cayenne pepper (and if you're that way inclined minced garlic or garlic puree) - bake for around 45 mins to an hour.

This.

Nice beer can chicken on the bbq, bit of green st, and some sweet potato wedges with a nice sprinkle of smoked sea salt flakes.

They're much sweeter raw; try slicing very thin with a peeler in a salad. Raw sweet pots and beetroot add colour and sweetness to otherwise bland salads.

Did this yesterday, but with about 10 min to go with the chips throw in a sliced up Chorizo.

Mango chutney
Soy sauce
Chopped up red chilli
bit of corriander
bit of lime juice

For me they work great in a curry with spinach and coconut milk smile

I had similar with lots of merguez sausages. Absolutely brilliant smile

This is a good shout. Our work place did a veg curry with them in once and it was delish.

Thanks for the replies, off to ASDA today to stock up on some of the ingredients!
