Right not been on for abit as flat out at work.
Currently in Istanbul with this show, and tomorrow we are throwing a truck drivers bbq.
Seems I've been alloc ated as chef! !!!!!
To work with I have chicken dfumsticks, chicken breasts, lamb skewers and a load of mince.
So I need ideas for good marinades, plus spice rubs, and good homemade burger recipes please!!!
At my disposal I have all the meat, a full caterers kitchen and the bbq's, I'M just after ideas as to the best homemade burger recipes, and how to get the best results for the chicken and lamb!!!
I can precook first if needs be, before switchi g to the bbq's smile
Any ideas much appreciated!!!

I do burgers just with mince and salt. Hold together nicely and taste great. Sometimes add a bit of Worcester sauce or brandy for a little extra kick.

Oregano on the lamb. It doesn't need anything else, but I put a generous helping of salt on too.

Also for a nice Mediterranean touch try and get some fresh yoghurt and mix some minced garlic and lemon juice in.

Hungry now. Lamb...

You are in Istanbul?

Go to any food market and get some fresh chili paste or even Sumac. Rub sumac into meat for marinades, mix it into fresh yogurt for dips etc
Saffron is also cheap, so use this in oil for cooking too to colour and flavour food.

Chicken marinade we use for BBQs (and just adapt quantities along the way according to your taste):

Fresh lime juice (lots)
Ground cumin (lots)
Coriander (dry or fresh is fine)
Garlic (minced)
Red onions (sliced)
Sesame oil (any will do if you don't have sesame)
Black pepper
Salt

Leave to sit for a couple of hours.

So good.

I suspect the 'lamb' may well be goat. In the eastern Mediterranean it often is, though sold as lamb.

No worries - just treat it the same as you would lamb, but marinate it well. Lemon juice, olive oil, garlic, thyme and a bit of chilli.

My best marinade for chicken is as follows:

200ml olive oil
1tbs smoked paprika (ordinary paprika will do at a pinch if you really can't find smoked)
2tsp finely chopped fresh rosemary
1 onion, grated
1tsp salt

Mix well, cut slashes in the chicken and marinate for as long as you can, preferably overnight. The ingredients sound odd, but you'll have to trust me that it works.

Citrus chicken kebabs - fresh squeezed orange juice, lime juice, lemon zest and a slug of worcester sauce. Cube the chicken breasts and marinade them for a couple of hours in the fridge, skewer it and bbq away.

Do I need to add: Be careful cooking chicken on the barbeque?

I learned a very painful lesson about that as a teenager....

Cheers, going to oven cook 1st and finish on bbq.
