What are your thoughts? if we put it on as a special it sells lunch and dinner, on the menu it wont sell at all. For me it has to be perfect or i wont even entertain the idea. Your comments?

I voted maybe...as I've not had it properly before. I've had blue fillet gone cold though biggrin

As a restaurant dish I'd have it as a starter( unless there were more interesting offerrings) but not as a main dish.

Odd one really. I've never ordered it off the menu, but have as a special.

Yet I'd never even thought of equating a special as 'extra fresh'...

Seems to be very popular in Zurich.

Never had it but if it were on a menu and nothing else interested would give it

It's def on a 'to try' list.

Yes if it is done correctly and served with raw egg, cornichons etc

I guess it's like Guinness; best consumed where popular.

Plenty French chains have it on the regular menu...

I always order it if it's there on the menu.

BUT I need to be confident that the meat hasn't been hanging around for too long and will be properly prepared.

What do you mean by "maybe if it's <24 hours old"? Do you mean minced, cos I'd rather you did it as required.

I can see that people might equate "special" with super fresh, but it's been hanging 21 days anyway. scratchchin

My issue with tartare, and steaks generally, is that they come straight from the fridge because no one wants to get meat out that might not be used.

I love Steak tartare, and Tuna tartare for that matter, but it's a dish I prefer to make for myself, so I know that it is properly fresh. I prefer to prepare my own Mussels and Oysters too, for the same reason.

Have it all the time in France. It is amazing. Not worried about freshness to be honest. If it is prepared correctly then it'll taste amazing. Needs to have (on the side) cornichons, pickled onions, capers & chopped shallots.

Love the stuff, I prefer it chopped with a knife as opposed to minced though - just a texture thing really.

At College we used to make it at the table on a little trolley. Two sharp choppers to cleave the meat followed by a rainbow of chopped parsley, capers and boiled egg.

Bloody lovely.

Had it a few times now and working in Germany one week we saw pork tarter with a raw egg on the menu! I suppose in Germany ze bacteria's are banned.

Depends who is doing it. I would not get it from the £7 for a steak, cheap and cheerful pub restaurant that gives away free rabbit food that all the kids cough and sneeze in. I expect to see it before it is chopped up and have an option for additives, but fresh ones not dried herbs. Bit of smoked garlic perhaps.

The old adage, chop the orns off, wipe its arse and stick it on a plate. Yum.

Ahhh, the picture clears it up. Your earlier post suggests you'd been taught (and were advocating) the replacement of raw egg with boiled!
