How do you stop them sticking to the steamer as they cook ?

Use baking paper, or cabbage leaves to line the steamer.

I also using baking paper - cut in to circles slightly smaller than my baskets. You can also buy single use steamer sheets from Chinese supermarkets - just like the ones the restaurants use.
