I've got a nice lump of pork from the farmers market for fathers day. What's a nice way to cook it using fairly normal ingredients?

Probably have it with some herby mash and roast veg. Ideas appreciated!

Something that involves prunes, they go lovely with some pork loin.
Can't find the recipe I was thinking of but something like this:

Rolled in crushed pistachios and roasted, the juices and pistachio's which run off make a delicious sauce/gravy too. Might be nice with the prunes in too, I'll have to give a go yumm....

Prunes eh? Not sure quite how i feel about prunes! pistachios are lovely though so that's an option.

Crush them and stick them on with a bit of butter or olive oil and seasoning i guess?

You don't need to stick them one with anything, rinse the meat so it's wet and the crushed pistachios stick easily. A little seasoning but you you don't need loads as the nuts are quite tasty, a little cinnamon is nice with it too.
