Ghost Chillies - any ideas?

After watching Man v Food and harping on about ghost chillies to people, I finally had these bought for me at the weekend from Borough Market:



I cut a little sliver off from nowhere near the seeds to try and it was very hot.

Now I have them, I'm not quite sure what to do. I don't want everything I make to be masochistically hot but i do want to make a couple of extreme things and save some for when I have anyone round the house that does the old "I can eat any chilli" pitch biggrin

I'll probably look to:

• Make a hot sauce with them (recipes and methods welcome)
• Put in a curry/chilli dish - do you just put a whole uncut one in and let it stew?
• Make a chilli oil for adding heat without the chopping

Any and all ideas welcome if anyone cares to share their foodie knowledge.

Just do the chili oil.

IMO they are stupidly hot and don't add flavour to a dish so best kept for any 'mates' that say 'hotter the better'.

Put them in a chilli, make some wings, add them to a curry.

Don't add a lot as people like to taste food not just heat.

Also you can pretend they are raisins and watch your mates eat them raw. (That did NOT happpen to me)

How much would you roughly use in a curry/chilli and would you chop it or put it in whole? Is it really just trial and error?

If you are going to be adding them to any recipe, and they require to be cut up. Make sure you wear gloves..... furious

If you cook a chilli then just add one whole one without cutting it up. Take it out when the dish is ready and it'll have infused it with heat and a little flavour.

Don't be scared of them.

Funny thing. When my father first came to England (from Estonia via WW2) he settled in Yorkshire, to work the woollen mills.

Now this was a match made in Heaven since the inhabitants of my father's region in Estonia had - how can we call it - deep pockets, but short arms.

As an aside, I'd recommend these...

My God they're hot, but strangely more-ish. I can't feel anything from my teeth backwards nuts

You could always make some yourself with a ground-up chilli and a bag of dry roasted...

That Hot Sauce Emporium link looks brilliant, I'll get some ideas from there.

Out of interest, has anyone eaten one raw and whole?

That is insane.

I have just (well - 15 minutes ago) had a brief lick of the inside of a Douglah which is up there in terms of scoville ( over 1 Million). My tongue is still hot and its now got my lips tingling as well. Anything more than a lick would have been a bit crazy.

Just gone back to the video laughlaugh The google ad that has popped up at the end of the video is for ''pre-paid funeral plans'' !
