I was going to do a poll asking whether you eat the skin or not, but a bit of Googling reveals that cooking the fish with the skin on is a southern prediliction. Oop North, them fishes are cooked entirely skin-free.

So what's hot and what's most definitely not, out there in fish and chips world?

And do you eat the skin?

I eat the skin.

However that's mainly because where I live portions of fish are so small that the skin comprises half of it.

Haddock or Cod, always skin free though.

Don't mind skin on pan fried fish but deep fried in batter just makes it go all slimy.

Had fish and chips @ Audries in brid last week and that had skin on, I liked it but it creeped the oh out for some reason. Never seen it in Leeds.

This from my local is about as good as it gets for me - a nice thick piece of fish that isn't in the least bit dry, no skin (have had this in NW Seaside resorts, Southport for example), cooked in beef dripping, batter crisp on the outside but slightly soggy near the fish, few scraps, plenty of salt and brewed condiment.

in NW london every local place I've been to is with skin however I ask for skinless and usually have to wait for them to cook it fresh.

Haddock or Cod, no skin and veg oil for me. Breadcake on the side, plenty of salt and ketchup. Usually accompanied with a cold can of coke.

Is bread cake northern for bread roll?

I haven't had fish and chips for 3 years, as long as I've been living in exile. 8 weeks to go and I'm back, fish and chips is near the top of the list.

Yes. Haddock, skin on. Not only does it help keep the fish intact it has a certain flavour which I enjoy. Given the choice, always skin on.

I also prefer the texture and flake size of haddock to cod. Not to mention the known supposed issues with the latter with bacteria/worms.

Up here in Jockland I've never come across skin on battered fish. We also eat haddock almost exclusively, unlike the peasants south of the border who prefer cod for some strange reason wink

Black side of plaice fillet, soaked in condiment vinegar, but I don't eat the skin.

I like the skin. It has a certain gummy 'savouriness'.

In Estonia they make beer snacks from crispy fried fish skin. Noms.
