Desert Island discs ... one cooking knife

We all know that most people end up with more knives than they actually need and most of those are very poor indeed.

So assuming you are stuck on the desert island or in a post nuclear holocaust and have to prepare a meal for one or more slightly irradiated guests what is the one make and size of knife you would not do without?

Machete. I suppose you can cook with it but you can also use it to catch the post apocalyptic zombie or even your guest if food is going to be short.

I was going to say this before I even scrolled down and saw the pics. Get one of these and a whetstone and you really do need very little else.

Despite owning a rather more flashy Hattori HD, out of the ones I have I would also probably choose my Hiromoto HC (240mm).

If choosing a brand new knife, it would be a Hiromoto AS or a Misono Swedish (also 240mm).

Haven't used a lot of different knives to compare one over another (we have a set of FA Porsche 301s), but of a set I would take the large chef's knife every time. Just prefer a large knife over smaller blades, even when doing fiddly jobs.

270mm was actually a mis-order trying to replace a 240mm, but I have found it much better. I've it's little 120mm brother and don't get on with that at all.

When ever these 'what knife for less than £500?' threads pop up i'm always reminded of Lofty Wisemans saying about a blade only being as sharp as the mind that wields it...

Those Ray Mears knives are mental! The original one is most of £500 and has a waiting list.

That said I reckon he might be onto something, as although I use my 10" Sabatier most it's a bit big for filleting and boning.

I'd take my wusthof chef's knife. Not the most expensive, or probably the best - but I love it!
