its also nice if you cut it into wedges the size of jumbo chunky chips, deep fry it until lightly golden, then put a sauce on it. It melts in the middle but is crunchy on the outside. Most sauces work, e.g. fry onion and garlic, add mushrooms, deglaze with wine and herbs, thicken with a little flour.
if your aubergines are large (rather than the little Asian ones) cut them open and salt for 30 minutes to draw some of the bitterness out.

Gorgeous smoked aubergine dip from the middle east. Amazing with some warm flat bread/ most arabic breads.
I also quite like it seasoned with oil, salt and pepper and then griddled. Nice in salads with a punchy chilli coriander dressing.
Probably my favourite aubergine dish.
