In actual fact the fish is so flaky it's falling apart there. It looks like I've butchered it a bit but it was a very soft texture and probably not the freshest. I have a filleting knife but prefer the razor sharp whustof.
I have tried various courier deliveries from fish mongers around the country but the best by far was off eBay! I order the fish filleted and in this case, each fillet was vacuum packed which made freezing simple. Best of all was the freshness of the fish when defrosted later. You can phone him with your order, he visits the local fish market in Brixham and gets it in the courier that day.
