Mrs Puggit and I honeymooned in the Maldives almost 10 years ago. While there we of course sampled some of the local cuisine. Those of you who have visited the Maldives will know how friendly the staff were, and they were happy to write up the recipes for us and email them so we could practise at home.

These authentic curries are easy to make, high on flavour, and medium hot. I think there's only one ingredient, rampe leaf in the beef curry, that you might struggle to find - more about it here: http://uk.answers.yahoo.com/question/index?qid=200...

Please do cook them up and share your experiences, they really are tasty yum

Aubergine Curry
Beef Curry
Cashew Nuts and Green Pea Curry
Chicken Curry
Mixed Vegetable Curry
Pumpkin Curry
Seafood Curry

These sound really delicious but I don't really like coconut or creamy stuff, what would you subsitute?

Unfortunately coconut is the whole essence of Maldivian food - I'd move on to the next thread wobble

We had the chicken curry last night, and the coconut wasn't really detectable...

Thanks for these recipes.

As a vegetable botherer there's some interesting flavour combinations I've not tried before, think I'll be having a stab at the pumpkin curry this weekend.

What's the 'mixed spiced powder'? Is this garam masala, or something else?

Or if you live in Reading or Slough, the Exotic Supermarket (Oxford Rd & Farnham road respectively)

Just to say thank you for the recipes

I have tried a few from scratch curries with little success but the seafood one here was fantastic

I used salmon and prawns, lemon instead of lime juice and cayenne instead of chilli powder (the chillies from our plant are fierce!)

No idea - I assume so.

Thanks puggit, the wife likes both creamy & coconut curries so these will go down a storm. I'll let you all know how they go when we return to the uk
