Very true! I used to hate Carbonara until I tried it in Rome where it was served without cream and contained lardons of pancetta rather than slivers of streaky bacon. That bbc gf recipe works well and is now one of our regulars.
1 Clove garlic

3 eggs, + 1 extra yolk
Parmesan.

Decent fresh pasta - get a pasta maker and do your own. The Gordon Ramsay fresh pasta recipe has a lot of eggs in and is rich but worth it.
Cooke the pancetta, add the garlic for a minute at the end. Cook the pasta,mix add the eggs stir, cheese and parsely on top. Authentic and easy.
As mentioned above, anyone putting cream in carbonnara should be shot.
In Italy they dont cook the egg. Often it comes in the shell and is mixed at the table. The heat from the pasta is enough to cook it.
