Quick and fun stir fry's
A simple one to get started
Make up 125ml chicken stock add 2 teaspoons fish sauce
Dust chicken/pork in cornflower fry in groundnut oil till crispy.
Then it's over to you add whatever veg you like.
Cashews work well too.
Add the sauce and chicken/pork for the last 1-2 minutes and serve.

Fajitas.
Chicken/Pork/Beef.
One of mine that the family like is based on left over bbq pulled pork. When I have the smoker out I do a vast amount more than we need. Shred it portion it up and freeze it.
Likewise when I do chilli con carne make a big batch freeze up suitable sized portions. Later these are used to go into burritos or empanadas.
There is a cracking chilli recipe on PH.
Stir fry if really pushed for time will fry up some chicken add a prepack stir fry vegetable pack from Sainsburys. Add in a prepack sauce if you want or soy sauce dry sherry to taste. Sometimes will add in a pack of noodles instead of something else.

Try this
2 litres of boiling water in a big pan
2 Knor chicken stock cubes - crumble - throw in the pan
2 BIG tea spoons of Chinese five spice - throw it in
1 Oxo cube - crumbled and thrown in
1 chilli pepper finely chopped - throw it in
Boil for a bit and keep boiling - taste for salt/pepper
Then you
Chop Chicken breasts/fillets - throw them in
Chop 2 courgettes fine slices - throw them in
Chop 2 leeks - big flat slices - throw them in
Chop 2 peppers (any colour) - throw them in (late to keep them crunchy - add them earlier if you want them soft)
Chop 5 spring onions - leave the green bits chopped really long - chop the white bits very fine - throw them in.
No GARLIC and no regular onion!
Let it cook for a while .
To Serve:
Wash a colander full of spinach in cold water - throw it in.
Handful of cherry tomatoes - sliced and throw them in.
Decide if you want to wash/precook noodles. Straight to wok noodles cook ok in the soup, others need to be cooked separately then - throw them in.
Utterly delicious to eat, super healthy and all that, easy post feast washing up too - one pan, one knife and chopping board and a few bowls.
