Fergus Henderson

This guy interests me. His 'nose to tail' eating has more supporters than many would think and his eccentricity seems endless.
I'm surprised we don't hear more about him online or TV.

A very interesting man.
I tried my level best to keep the St john Hotel from going bust - but there is a limit to what one man can eat and drink!
St John Smithfield is my "lucky" restaurant and every good deal and birthday is celebrated there
St John is about 300yrd from my office. Often see Fergus standing outside wearing a dog-eared linen suit and smoking a roll-up. I tried my level best to keep the St john Hotel from going bust - but there is a limit to what one man can eat and drink!

He has a fairly low media profile, but it would be fair to see he is very well known indeed - look at the ubiquitous roast bone marrow and parsley salad starter that can now be seen on every restaurant with pretentious of "rustic" fair.Interesting note from the "Michelin star - who owns them" thread - the St John room is very, very basic indeed - canteen esq, but the food won the star.

The stars are only awarded for the food.
Yep, that's what I was referring to - check that other thread: http://www.pistonheads.com/gassing/topic.asp?h=0&a...There was a question as to whether the fripperies/service count towards the star but clearly it is just the food.
I worked in a 1* restaurant previously.
