How about a but of an adaptation of crepe Suzette but with peach instead of orange.

Was thinking about making Peach Cobbler, but the crepes would be easier.

The booze would overpower a cobbler - flamed off over the pancakes with some brown sugar and caramelised peaches would be tasty. Some vanilla ice cream on the side - actually might give it a try myself.
