I make a mean pea and mint puree and my parsnip puree isn't too bad either.

I would like to make them 3 days in advance. I'm not worried about them going off, even though they have lots of butter, because I'd expect butter to keep in the fridge. But will the flavour / texture alter with 3 days in the fridge?

As long as its in an airtight container. It will be fine.
