christmas dinner, oven gone bang :(

as per title 
we still have the hob, and have aquired a tiny oven for the spuds. so i have half a plan which involves the lamb joint being done in the slow cooker for 7-8 hours. was going to sit it on top of a quartered onion and some whole carrots till done. if i use red wine, which, and how much and do i add water, (sorry can't remember)
once the lamb is done, (i'll have seared it pre slow cook as i remember this worked well before.) i'll leave it wrapped in foil to settle, and go about the gravy. i'll drain the juices from the slow cooker to skim the fat, and reduce down in a pan for the gravy. should i add port, red wine, or something else. have some red currant jelly to add aswell to the gravy.
so leaves the veg now. parsnips and carrots. stumped with these so any ideas or suggestions on how to jazz these up would be a big help. sure i read somewhere about brussels done with chesnuts and some cut up bacon??? is this done in a pan?
what about the parsnips?
also stuffing, should i make my own, or do i cheat this year as too much else going on, without having a proper oven to hand.

cheers. prefer them firm to soggy. was listening to tom kerridge on chris evans show earlier this week, and he was describing this, but with brussel tops.HTGMH

so i will go with your advice, boil a little bit, drain, and into the pan with the butter and chopped bacon and pepper, and add some chestnuts

ok, excuse my ignorance, honey glazed carrots and parsnips??????
boil first? then coat in honey maybe, then what, finish in a pan/oven/other???
i'm up for having a go at anything, but am pretty clueless.
This happened to us on xmas eve four years ago after we had just moved in to our own flat and invited my mum, sister and her husband down. My mum lives down in Bognor so we got up about 4am on xmas morning and drove down there and cooked the turkey and bits in her oven and then drove back with it resting in the boot.
Bit stressful but the journey down from Battersea to Bognor was a PB, shaving 45mins off the google maps prediction.

Thankyou very much indeed, cracking offer. I'm in basildon by the way. Think I'll be ok though, lamb in slow cooker, veg on hobs, and taters in the small oven, but thanks again for such a nice offer

The mrs grabbed me some chestnuts today as I want to add these to the brussels and bacon.
