Does anyone know much about freeze drying food and vacuum drying? Maybe a cheaper alternative than science lab or industrial kit.

I had the idea for blending old fruit and making into snack bars for the children and myself, but to actually produce and preserve I couldn't find another solution than buying high tech kit or manufacturing myself.

Basically I want to make space food!

You could always just buy a food dehydrator and experiment.

Freeze drying is not a trivial process. There is no way to do it without equipment that can rapidly freeze the food below its eutetic point, then pull a vacuum hard enough to sublimate the frozen water into vapor and extract it while providing the correct amount of heat to cause sublimation.

Minimum equipment for even small scale freeze drying is neither small nor cheap. It isn't a process that will work well with any old food either.

Stick with a domestic 'dehydrator'
