Roast leg of lamb. Help

Usually do chicken and lamb chops for dinner at Xmas but this time, butcher had a really nice leg of lamb, deboned and ready stringed which I bought before he shut up for Christmas, it's just over 2kg. How long do I roast it for? Butcher recommended 30 mins per 450 grams plus 30 mins. Does that sound right? That's 2.5 hours at 120 degrees.

Any other suggestions. We like our meat medium well so need to cook accordingly.

I would treat it like a joint of beef so 30 mins at 220 and then 45 mins to 1hr at 180 then rest 30 mins+ best served medium rare. If you have a probe remove it from the oven at 47dc

edit just read the bit about medium well. Blast at 220 for half hour then lower temp to 100dc and cook for around 3 hrs and then rest if you have a probe take out of the oven at 60dc

The butchers instructions seem way too long and low. It will dry out.

For juicy roast lamb cooked 'medium' (ie. just pink in the middle), sizzle at 220C for 30 minutes, then reduce the heat to 160C and cook for 15 minutes per 500g.

Rest under foil in a warm place for at least 20 minutes before carving.

season with salt and pepper, stud with rosemary and garlic shards, sear in a roasting tin on the stove till well browned, roast for 1 hour 15 mins, cover with foil and leave to rest for 20 mins, make gravy from the sediment

Truth be known, I judge the cooking time and method by eye. If an elderly beast, long and low. If foetal, short and hot.

Roasting times are a guide, however don't be tempted to miss out the 'resting' at the end of cooking.

I don't understand this, there are few things as nice in this world as low/long cooked lamb.

Have I misunderstood?

Gotta be furnaced for the first 30 mins then reduced to 150/160 ,garlic rosemary and maybe some thyme, not forgetting to add the roasties into the pan ,

Leg of lamb best cooked to medium, I have seen recipes suggesting slow cooking one but 2.5 hours at that temp would not be good.
Slow cooked shoulder is great, 3 - 4 hours perhaps?

Piercing it all over and smearing in a rosemary, garlic and butter rub is also good.

This, I'm adding crushed coriander seeds instead of the rosemary today for a change smile

Agree entirely with 20-30 minutes furnace blast, then down to 160-170 for 20 minutes per 500g.

Now, as well as studding with garlic and rosemary, I like to stuff anchovies into the joint too - little pockets stuffed with anchovy, garlic and a sprig of rosemary.

It's 2kg so should be absolutely fine for 2.5 hours at 120.

Just an update. 20 mins @ 220, then 1.5 hour at 130 and this is now resting



I had a cheeky taste just now and it's stunning. Thanks for your info guys, everyone's coming over in an hour and I'm sure they'll all be tucking in. Merry xmas

Another thing that cannot possibly be right, can it? Roasting potatoes at 150/160? Doesn't seem right
