I was at my Brother's place recently, and when he had cooked dinner, he set the table with a bottle of 'Nando's Piri-Piri' mayonnaise.

I liked very much. Gave the mayo a wee bit more interest.

So when I was at Sainsbury's again, I bought some of my own. However, at the same time, I also saw Sainsbury's own 'Chilli Mayonnaise' - and as it was cheap, I bought one of those too.

First time I tried it, I was expecting mayonnaise with a bit of extra flavour. However - what I actually got was mayonnaise with a proper, interesting and taste-bud enlightening kick of heat that was one or two measures above what a beginner might expect! biggrin

It's not the last word in added heat and spice for experienced taste-merchants, I grant you - but it's good enough that I have quickly emptied my first bottle with delight, and I thought maybe a hidden gem that other Foodie PH'ers might like to try?

I like to mix normal Heinz mayonnaise with some Sriracha, or better still, some Gochujanglick

I'm another mayo and chilli fan. For me I mix ~2 tablespoons of helmans with ~0.5 tea spoon of Cambridge Chilli Sauce Company Trinidad Scorpion sauce.

Gordon Ramsey does an interesting mayo mix in his latest book.

300g good quality mayo
1 tbsp whole grain mustard
1-2 tbsp Chipotle Paste (I found some in Sainsburys by the spices)
1 tsp runny honey

Goes really well with practically any meat.

I soak half a dried chipotle in hot water for 20 minutes, chop it finely, and then stir that into shop-bought mayo to taste.

Lovely on a chicken sandwich.

I love putting stuff in mayo (er...) especially mashing a bit of stilton in for dipping chips.

On the chilli theme, a bit of Tesco hot chilli powder livens it up nicely for me

Any idea if that tastes in a similar vain to Kimchi? Might have to try some Gochujung, sounds interesting.

Try adding some Harissa Paste to any high-fat mayonnaise too. A wonderful creamy treat with that something extra.

I love tons of cracked black pepper mixed into helmans real mayo... great on toasties!

I even enjoy it when bbq sauce and mayo contaminate eachother on the plate... is that weird? Hehe

Gochujung pretty much tastes like Kimchi without the fermented cabbage bit - it's the main flavour in a lot of Korean food, and goes very nicely with beef.
