I have been given a boned goose and I have looked online for cooking ideas with not much luck. Anyone have a good cooking idea for a tasty dish?

I've never boned a goose before...... hehe

Goose risotto is quite nice!

I'd just roast it.

On a rack over a pan to collect the delicious fat (save this for roasties) and allow the skin to get crispy all round.

Spiced red cabbage would be a good winter accompaniment.

Not tried with goose, but if I'm boning a bird I'd stuff it with a meaty stuffing, like a nice sausage meat stuffing. Goose may be a bit big but for a chicken you can roll it up in an oiled jaycloth (blue not green as the green die leaches) to make a tight meaty roll and roast it in the cloth, much less hassle than trying to stitch it up once you've stuffed it.


Alternatively put another boned bird inside.
