Morning all,

Any good recipes for skin-on sweet potato fries?

Not sure what to spice with (I'm thinking smoked paprika) or how to cook them. I want to over bake - should I par-boil before? All the recipes I've seen make no mention of doing so.

Chop them up into some fat wedges, put some oil on and season (add paprika at this point if you want). Stick in the oven for about 40 mins at 200ish.

Alternatively, if you want to make a bit more of an effort then prehaps try this. The lamb rib recipe on the same recipe is also well worth a go.

I tend to just stick them in the oven or deep fry them. Bit of black pepper and paprika and job's a goodun.

I've found if you arrange them on the tray skin side down they don't stick.

As above but with a couple of cloves of crushed garlic on the oven tray.

Some good tips here, thanks!

I think I will go with the link that Afanc gave, they look phenomenal. Will also ensure to put skin side down!

Re: garlic gloves on the baking tray, I have never really got this. Surely the flavour is only imparted to the fries directly touching/really close to the garlic, and if you leave it in for more than about 30mins I find the garlic just burns? Am I doing something wrong?

Toasted coriander seeds 1tsp
Smoked paprika 1tsp
Cayenne pepper half tsp
Oregano half tsp
Salt and pepper

Mortar and pestle all of the above drizzle olive oil over wedges and sprinkle above mixture. Roast for about 35 mins turn half way through.

They look good - so I'm doing them tonight smile

Added some paprika and black pepper to the bag for a bit of flavour and they'll accompany a couple of horse steaks.

If you have a dehydrator you can make awesome sweet potato fries and crisps.
