I had this sitting in my kitchen earlier:



Its now in the dogs... but I was thinking maybe try and cook one for myself next time just out of curiosity.

So are they worth cooking for human consumption? Any suggestions on an easy recipe?

better than eating it raw, I suppose

pig cheeks are a bit of a delicacy

edit: looking at it, i think yours are gone already

Brawn is nothing exotic, you can buy it in the super market! Growing up my step dad was a slaughtermen so we had it a lot biggrin

Saw a programme over Christmas http://www.bbc.co.uk/iplayer/episode/b03ndb8c/Tudo... where they prepare and cook a pigs head, used to be the centre piece of the Christmas meal it seems. I did consider giving it a go until I saw the amount of work involved, like digging out the skull without mincing up everything else for instance. Also I suspect I'd be the only one to want to eat any as the rest of the family might just not fancy it.

No slow cooker unfortunately - I've got an oven, grill, hobs, barbeque/smoker.

I used to work in a butchers, there was always a pigs head soaking in brine in a bucket in the walk in fridge. Used to stay in the water for 24 hours but not sure how the governor used to cook it though. Thin he used it for brawn.?

As a matter of interest, how much did you pay for it? Presumably not much, if it's going to the dogs.

Cheapest I can find in the UK is £14 for mail order. The local butcher would probably get one in, but I doubt it would be much cheaper.

I might have a go at one. Done properly, brawn is delicious.

We have a photo of my first cat sat next to a pigs head, he was a very big fluffy Persian but the head dwarfed even him. No idea how my mother cooked for us it but I know she wouldn't have wasted an inch.

2.035kgs, 1.98 euros/kg, 4.03 euros in total.

That was for half a head, ie split down the middle already. I had them half it again before they bagged it. I should have had them quarter it, it was too much and had to wrestle the bits back off the dogs and bag them again for tomorrow.

Its more expensive than they normally get, I just seen it and thought why not. I bought turkey livers too (1.49 euros a kg) and a full chicken but portioned up (so including all the bits humans generally dont want like feet, heart etc) for 3.49 euros a kg.

My local butcher sells for £3 each, cut up in quarters.
Put in a big saucepan,bit of salt and boil for about hour and half.
Get a nice size bowl,then get the head out and pick all the meat away, you will be surprised how much meat there is, after a good boil the meat will fall off the bones.
Break the meat into small rough bits and bung in the bowl, when you filled the bowl squash it down with a tea plate then put in a bit of the water it was boiled in, this is natural gelatine and will set like jelly.
Let it cool put the tea plate on top of the meat in the bowl weigh it down with a tin of beans and bung in the fridge overnight.
When set pop it out the bowl.
Home made brawn, brown bread buttered,nice slice of brawn with some Daddies brown sauce..

I went to the Hand and Flowers for my 40th back in march. I had pigs head crocket which was stunning.
