So , what's the best way to have your steak cooked ? personally I'm a medium rare man, how about you lot?

Depends on the steak to be honest. For a good fillet I'd go rare, for a sirloin or ribeye I'd go for medium rare.

My default choice would be medium rare - I may vary it slightly depending on the cut of the meat, or the place I'm eating in.

varies with cut

as long as moist, easy on the mouth and with taste.......I do like a good medium rare fillet (and washed down with a full bodied red...Primitivo / Tempranillo / Shiraz or similar)



mind you when carving the Sunday roast I have been caught carving the 'almost' burnt parts and putting them to one side for later to savour!!!!!

Rare to medium/rare anything over is a bit plebish and anything under is just a bit too try hard.

Medium rare ribeye is my favourite.

Can't beat a good sirloin or ribeye, rare but well rested fried with salt/oil only. If you've got a good butcher rump (often overlooked) can be cheap and tasty.

Rare.

I have to say, I really hate asking for a rare steak and getting medium rare (or worse!) instead.

My favourites are bavette and onglet. Restaurants which know how to cook steak properly serve these.
