Inspiration required!

I seem to have invited some friends for dinner at the weekend and am drawing a blank on the menu

I have some duck confit (in a tin!) from France which I might do with a nice green salad and some chips, traditional French style. For dessert I'd immediately go for something like a lemon tart but I always make a lemon tart so want to do something different. Absolutely no ideas how to start either, soup of some sort?

I also have a veggie to cook for - can you confit fish?!

Ideas, recipes, horror stories all welcome!
