Protein 'batch' meal

I'm after a bit of inspiration.
I used to have a really good diet to support my training however my work hours are becoming longer and longer so I don't have the energy to make proper food in the evening. So I'd like to prepare a big pot of something on a Sunday which I can just heat up each evening. Ideally it will be chicken based with veg and whole meal rice or pasta.
I'm thinking something simple like chicken, onions, mushroom, pepper, courgettes, sweet potato in a pot with chopped tomatoes and the rice or pasta cooked separately but it seems to be lacking inspiration, does anyone have any other ideas?

How about a Stir Fry? Prep the ingredients the day before.

With stir fry you can always boil a load of chicken, package and shred it, then take it out when it comes to doing a stir fry. veg takes a couple of minutes in the microwave which you can then chuck in.
I'm sort of in the same boat as you. I want some simple things i can do in batch and heat up, though I want it as something that I can take with me to work instead of spending £3-8 buying lunch.
