Good 'lunch' food?

Work is in a bit in the sticks, and going to the shops is difficult, so we generally take food with us. There is a small kitchen with oven and microwave, so heating things up is fine. Soup is very boring, and I would rather cook something at the weekend to do a few days. Lasagna is the obvious one, but I cant eat that every week! Not a fan of chili or spag bol.
Does anyone have any suggestions as to things which can be cooked en-mass then warmed up during the week? Apparently enchilada's can be warmed up okay.

Beef bourguignon, or any variation on a stew that includes potatoe and veg. Could be microwaved.
How about some empanadas? http://www.wikihow.com/Make-Empanadas basically cornish pasties but they'd make a good lunch that could be frozen and reheated and you can always pack some frozen veg to microwave with it.
