I love curries, I've a few recipies that require coconut milk. I'm not keen on coconut what should I substitute it for? Stock for instance or will I miss the whole point.

You'd be missing the point, but you could try cream.

not stock, double cream might suffice but obviously you lose the coconut which is generally the point of curries like Thai green etc

I really dislike coconut but love curries made with coconut milk, it adds a 'silky' taste and a very smooth consistency.
With a decent amount of spices I can't taste any coconut flavour.

Why not give it a try?

You could make a cheapo curry with, say, a small pack of prawns or hardboiled eggs and bin it if you don't like it.

N.B. giving it to the cat would be a big mistake biggrin

If you use one of those authentic Thai curry spice sauces (the concentrate stuff) you can't really taste the coconut - just the great green / red or yellow curry sauce.

Good man. Add one tin of the milk, 2/3 tablespoons of the curry mix and use prawns or chicken. Chuck in some veg like red pepper, baby corn, baby asparaus,
french beans, mange tout etc - serve with sticky rice - delicious.

Thick set natural yogurt is what you want.
Just add it with 5 minutes cooking time to go & don't boil the hell out of it.

If you use yogurt or cream try adding some sugar, pref. palm.

Not tried it myself but coconut obviously has it's own flavour and is sweet.

All coconut curries are sweet(ish) so might it work.

Coconut milk in a curry doesn't really taste of coconut though, especially when you've got a strongly spiced paste going in.

I'd advise making your own paste for maximum flavour though.
