Ingrediants needed for the base
225g of unsalted butter chilled and diced
100g of Golden castor sugar
200g of Plain flour
115g of Ground almonds
1 Tsp of Vanilla extract
Whizz all the ingredients in a processor/ mixer and place into a 23cm square tin lined with baking parchment (leave sides long enough to aid removal)
Prick the base with a fork and cover over with cling film and chill base for 1hr.
Preheat the oven to 140c for fan 160c electric and cook base for approx 40 mins until golden brown.
Leave to cool.
Caramel ingrediants
100g of unsalted butter
70g of golden castor sugar
1 Tbsp of golden syrup
275g of nestle caramel (the one in a tin found next to condensed milk)
1 level tsp of fine salt
Put all the above into a saucepan and bring to the boil, simmer for 8-9 minutes until amalgamated. Pour over the cooled base.
Allow to cool then place in fridge for 1hr.
Chocolate topping
200g of at least 50% cocoa dark chocolate
25g of white chocolate.
Melt the dark chocolate in a bowl over a saucepan with boiling water in it. once fully melted pour over the already set caramel. melt the white chocolate in the microwave for around 20 seconds and flick this over the dark chocolate to make a pretty pattern.
Cool for at least an hour and slice when chocolate has just set.
Eat and enjoy.

If you've got as sweet a tooth as me, and you really, really want to clog up your arteries, try making that with a base of chocolate cornflakes instead of biscuit, then keep it in the freezer!
