Further edit - It seems like you simmer for 2-3 hours, allow to cool, peel off the skin and then pan-fry

I like lamb's tongue, and ox tongue as well. I have cooked them both, but I've only used lamb tongue in a boned and stuffed chicken.
Both can be tough if not cooked properly & ox tongue needs to be pressed.
Boning a chicken isn't as difficult as you might think and the stuffing can be of your choice. Cook and skin the tongues before adding to the chicken with the other ingredients.
I can't find the recipe I used, it was about 25yrs ago!! & there are some photos somewhere. It was part of a picnic I did for about 15 people prior to Goodwood Races.
I did find this though which you might find useful or inspiring?
It really is worth the effort.....you'll need a good sharp boning knife

I have eaten lamb's tongues, since way back when, these were nigh on the cheapest meat to be had. Most people fed them to their dogs.
IMO, there is no getting away from the 'sheepiness' of lamb's tongues.
They work reasonably well peeled and in a rich and tomato-ey curry where you'd otherwise use mutton. Also marinated, skewered and char-grilled Moroccan stylee.
However, anything else... Bleurgh!
