Oh Crumbs.

Having never done the factory pastry thing before, the Short Crust 'Jus 'Rol' plan has gone titzup. If it's not as hard as frozen snott, it goes all floppy. YUCK!

I did a Filo thing that worked okay, but I'll not touch this short crust again.

Puff pastry must work, 'cos it's a real pain to do otherwise.

I've only ever used the filo and puff. Shortcrust is so easy to make that it's pointless buying it and if I have the time then I'll make a ruff puff in preference to buying that.

To be honest, that's what I wanted. Don't have a machine at the 'mo. And the motors kill boat batteries.

Pork fillet, trimmed, in a duxelle and mustard mix for context.
