After warching through Gok Wans chinese cooking show I gave the chinese cleaver a whirl. I have always spent a bit on knives and have quite a selection. However now I always find myslef using a cheap, few quid, cleaver I got from a chinese supermarket. Stainless blade and it is easy to sharpen and I find them really versatile. The broad blade makes keeping your fingers out of the way easier and they are great for scooping up what you have chopped. I think I would be happy with just the single, broad and thin cleaver.

Seen as I am only using one I was thinking of getting a decent one, nothing wrong with the one I have really. But I do like the black silver two tone look of the one Gok uses in the show. I see the CCK (Chan Chi Kee) one is similar or probably the same. It seems to be highly rated, does anyone know where you might get one for reasonable money??

you only need a £10 one from the local chinatown.

I have had mine years and its an excellent bit of kit.

Agreed with this. The cleaver I bought for less than a tenner in HK 7 years ago is still serving me well now. The handle might not be the most ergonomic, but the blade is well-balanced and always sharpens easily. There are better things to spend your money on in the kitchen...

I bought a cheap one from Ikea about 10 years ago and use it a lot. Sharpens easily to a razor's edge.

I am not easily pleased by cheap knives (Japanese steel, German Damascus and Ceramic Zirconia are my usual knives), but this one is amazing value.

I'm still using knives from my dad's set when he set up his own TA in the late 70s!
