Scottish Tablet - Can anyone help

Hi All,

Going to attempt to make this at the weekend, fancy a sugar rush. Anyone got a recipe / tips?

There's stuff online, but thought I'd ask the PH massive

Crystalline form of fudge, sort of.

Of course, if it's gone crystalline, it's not been cooked / prepared properly. There's a real skill to making it properly. It shouldn't be too hard and should melt in the mouth.

I was on my way home from Scotland last week, and in Biggar I stopped for a cup of tea, whereupon I purchased a piece of Tablet form Mrs Gaspode, as she loves it.

What I didn't realise is that 300 miles in a coat pocket means that I presented 'er indoors with a paper bag full of molten tablet. It had to go into the fridge for a couple of hours to set again. But it still tasted fine.

This is the recipe I have used a few times :

Would recommend increasing the stirring time by a few minutes to help it set properly.
As a rough guide - when your arm feels like it's about to drop off then your tablet is almost ready!!

Worth it for the pure sugar rush.
