Following on from the Lamb http://www.pistonheads.com/gassing/topic.asp?h=0&a... last weekend, i decided to go for some Suffolk Chicken this weekend.

Marinaded in Asian flavours, i've ground down some spices and made a mix similar to Togarishi (Chilli, orange, sesame seeds, szechaun peppercorns) and used a drip of sesame oil, tamari soy sauce, fresh coriander and some yuzu juice. I've used a Chipotle chili to warm things up a bit though.

Prawns are in fresh lemon thyme, lemon rind, lemon juice and garlic.

Delicious.

Chicken is quite hard to do on a barbecue usually because of different meat thicknesses, but i find that constantly turning the meat gets an even cook (Turn every minute essentially).

Get a weber!! I had so many issues with chickens on a regular barbeque that I ended up having to oven cook them a bit first.

With the weber its so easy to do with the indirect heat.... best purchase I've ever made.
