What food to bring from Italy/Croatia/Slovenia road trip?

Me and the OH have a road trip this Summer. 16 days of driving through Germany and Austria to Slovenia, Croatia and northern Italy (and back via Switzerland). We have a nice big car to stuff full of unpronouncable foods and wines.
Any specialities or local must-haves to pick up? The obvious are wine, olives and olive oil, and we're picking up the OH's sister who has a lot of foody contacts thereabouts.
What else can we realistically collect as we go and bring back without spoiling? Whole salami and other cured meat is presumably OK.
But should we use a coolbox for cheese/etc, too?
Any and all advice welcome. Never done a trip like this before, but every penny we spend on good food is money saved (she reliably informs me).
