Help - Cooking Brown Rice

Hello!

I don't have a rice cooker and I only have brown rice. My brown rice always ends up stodgy when I cook it - does anyone have a good technique?

My normal recipe for white rice is 1 cup of rice to 2 cups of water, bring to boil, lid on for 20-25 mins, done. Even if I leave it for around 30-35 mins, the brown rice still ends up stodgy.

To further complicate matters, the recipe I want to do is this: http://cooklikeajamaican.com/rice-and-peas/

I use Uncle Ben's rice for rice and peas. Not the 'Express' or any other fancy variant - just the boggo stuff in the box.

Use that, or don't bother trying to attempt rice and peas that will actually be edible.

Are you rinsing the rice thoroughly before cooking? The stodginess is because of the starch, rinsing the rice until the water runs clear is one option, the other is to fry the rice in a bit of oil to seal in the starch.

I just boil brown rice in a big pan of water and strain it through a colander.

Wash brown rice and add to a sauce pan with a tight fitting lid. Use the ratio of 1.5 cups water to 1 cup rice.

Set the heat to maximum, and bring the rice/water to a boil uncovered. Then stir once and put the lid on the pot. Reduce the heat to low/simmer. If your lid has a steam valve, keep it closed. Let the rice simmer for 20 minutes no stirring.

Turn off the heat, and let the rice sit in the covered pot for another 10 minutes. No need to strain as the water will have evaporated.

I do rinse the rice before I use it generally.

Will give the 20min on, 10 min off heat a go. If not, will resort to Uncle B.

Interestingly, I was reading up on brown vs white rice and the difference in nutrition is so minuscule that I don't think I'll both with brown rice anymore! Not worth the extra hassle.

Boil in the bag stuff here.

Easy to do, serve and control portion size.

It's a bit lazy, a but more expensive (but only pennies). I've given up with normal rice.
