Cooking topside?

Was late to the butchers yesterday and could only get topside to cook.

Curious for peoples takes on the best ways to cook it? Hot and quick? Slow and low? Advise me!

Many different types of cooking processes are available for Topside, including LilMonkeys method of simply bringing the meat to something approaching room temperature, then serving. wink

Fast and hot, rest well and slice very thinly. That's the only way I can eat it as it's as dry as fook.

Although it does make a good sandwich with horseradish mayo and watercress.

20 Mins per lb at 180 I believe is the 'standard' way to cook it.

I personally wrap mine in one of those nasty cooking bags and turn on a regular basis to keep it moist.
