Hawker Noodle Recipes

Hi

I was wondering what interesting hawker style noodle recipes people are using.

I have used this recipe as my basis in the past :- http://www.epicurious.com/recipes/food/views/Singa...

However, I always find it a little dissappointing, not like the asisan street food I enjoy on vacation. What is missing? I beef the recipe up with a lot more chilli and sweet and spicy roasted peanuts.

No idea if it's supposed to be in there but I'd be tempted to throw in some tamarind paste to give it that sour (think Pad Thai style) tang
