Got a nice chunky lamb shank to cook for Saturday night.

Normally season and cook with Rosemary and garlic and slow cook.

Give me some better ideas......

I can't bring myself to watch his pogrammes as something about him really irks me, but his recipes can be fantastic and this one is no exception.

Was also going to suggest a Jamie Oliver recipe, unfortunately don't have the book to hand but it was in the "Naked Chef" either the first or second book.

Basically prepare some sort of spice rub for the shanks (salt/pepper/garlic/coriander seeds/chilli/garlic?), coat them in that and leave for a few hours. Sear the shanks in a hot casserole dish (cast iron Le Cruset type job is good) and set aside. Then fry finely chopped onions, celery, carrots and garlic until soft add balsamic vinegar, reduce, then a tin of tomatoes, some stock and probably some other stuff I can't remember. Return the lamb shanks and slow cook for several hour. You'll wind up with very tender lamb shanks just falling off the bone and a really nice sauce to pour over. Think you add some fresh herbs at the end (parsley?). Perfect with some mashed potato.

I did it about a month ago and its awesome. To the point we froze most of it and have the joy of having to make a decent gravy to go with it.

Absolutely Lush, Mrs doesn't really get on with Lamb but she was all over this like a rash.

Lamb, harissa paste, onions, garlic, cinnamon, olive oil and some water makes a beautiful tagine-type dish.

finish with yoghurt, toasted almond flakes and some chopped mint.
