For Christmas day I'll be cooking my traditional huge roast of turkey and a rib of beef with all the trimmings sourced from the local butchers.
It'll be a massive feast to be eaten by just my wife and I and whatever we can convince our almost 2 year old to eat.

The best bit of huge a huge meal is loads of leftovers. I normally cook something nice up with them for boxing day (did a fantastic pie last year when some friends came over).

This year I have my family over for boxing day, the first time we've spent any of Christmas with them for 4 years having been out in Asia for a while, so I thought I might do an Asian inspired boxing day meal with the leftovers.

I'm thinking:

Starter:

Pigs in blankets shredded with leftover cabbage and chestnuts made into dumplings with rice vinegar (I'm thinking of doing braised red cabbage so this could add a nice twist to the dumplings).
Char siu bau with turkey
Rice rolls with the leftover veg covered in soy sauce

Followed by:

Crispy fried turkey with pancakes, hoisin and cranberry sauce (going to use the legs as they should have some nice dark meat that will work well, but might need to slip some butter under the skin to help it crisp up enough).

Turkey mussaman curry using the leftover roast potatoes.
Beef in penang style curry sauce
Fried rice with leftover meat and veg

For desert:

marzipan dumplings filled with mincemeat and a brandy dipping sauce
Sticky rice with cinnamon and brandy soaked clementines


Has anyone ever done anything similar? Anyone have any better ideas about recipes using traditional christmas leftovers. I know a duck or goose would make more appropriate leftovers but MrsJimothy has insisted on Turkey as to her it's more traditional (which is odd as a traditional christmas to her is boerwors on a bbq as she's from southern Africa).

Great-sounding menu if a tad heavy for Boxing Day.

I'd lighten it up by using lettuce leaves rather than pancakes, unless you can get the very thin ones which are like rice paper.

I'd also include a sorbet / fruit option for dessert.

Turkey and sweetcorn soup. One of the best things I ate in Asia. Basicley Turkey in stock with creamed sweetcorn and beaten eggs that go like noodles. It's amazing and not too heavy
