Hope someone can help. Just made our first batch of chilli jam. all seemed to be going well, and followed Nigellas recipe to the letter. however the end product smells and tastes strongly of the cider vinegar. What could have gone wrong and is there any way to neutralise it ??

What stage is it at? If it's hot and cooling the vinegar will subside. If it's cold, the easiest way is probably make another batch with very little vinegar and then mix it in at the end. You could add sugar/honey, maybe try a small amount as an experiment.

These vinegars vary in intensity. Yours sounds potent. Add more water and sugar and whatever you used to make it set and then re taste.
