mushroom soup too grainy
Discussion
A basic mushroom soup for me is: onion and garlic, sweated down. Mushrooms added, cooked down. Add thyme, then chicken stock - then blend.
However it often turns out quite grainy, regardless of the amount of blending I do. I assume this is because of a water based stock rather than milk or cream.
I'm not keen on adding those kind of calories - is there anything I can do to get a smoother soup?

Your blender isn't powerful enough to blend smoother. It's as simple as that.
The smaller the pieces are, the more energy they require to blend.

Home made mushroom soup is never going to be as smooth as bought/canned, since my estimation is that most of these contain almost no mushrooms at all.
Put it through a sieve if you're that bothered. Otherwise - enjoy the texture and flavour.
