Whenever I find myself passing the delicatessen counter of various supermarkets, I always have a look for the Huntsman cheese I used to buy, seemed to have disappeared years ago. Layers of Double Gloucester and Stilton, and absolutely delicious.

I don't normally care for cheese 'cocktails' but IMO the Huntsman really worked.

So I tried Googling in and found that it could still be got, by post in 1.25kg half rounds. So I ordered some, and it came today in an insulated box with a sort of bubble-wrap where the air is replaced by ice.

It's quite big, and I'm supposed to eat in within 3 days.

Then at lunchtime my wife returned with several pieces of cheese her friend was disposing of because they were slightly out of date, some Yarg, some Cambozola, and some Stilton. I care little for sell by dates on cheese, some extra mould just adds texture and flavour.

So I suppose I had better get started. Wish me luck, I may be gone for some time.

Here's a pic of the Huntsman, with an envelope for comparison

Looks lovely, you could make one hell of an Empanada out of that!

Hmm, that sounds a bit foreign to me. I daresay it would be very nice, though.

I forgot to mention earlier, the suppliers made a mistake with the postcode, which resulted in the delivery being returned to them. So to make up for that they also put some 200g sample cheeses in as well, two of which I won't bother with I expect, but I've already tried the Aged Red Leicester, and bloody nice it is too, had it for lunch.

Aged Red Leicester I tried recently too, better than I expected.

Empanada - Wrap in Pastry, bake.

Mixing cheeses in one cheese sounds a bit off but I'm willing to try it given the opportunity.
I've always found red leicester to be a bit dull and uninspiring though - are there 'good' ones?

I'm enjoying the aged red leicester that I have, and I consider myself to be something of a cheese-aholic with excellent taste and no prejudices.

I quite like ordinary red leicester too, the trick with the milder cheeses is to eat enough so that the flavour builds up to acceptable levels.

I've decided to postpone starting on the Huntsman til tomorrow lunchtime, when I shall be having it (not all of it, but quite a lot) with some lightly buttered Pain Rusticas from Waitrose, and some cider.
