Frozen dates

I don't really understand this, once somethings frozen, it's frozen right?
It won't carry on deteriorating will it?

Yes, it will. Unless you can freeze to to -273c (Absolute Zero) to stop all atomic movement... a normal freezer just slows down the deterioration.
